「無垢」と「調和」。
これが、私の提案です。

「無垢」 ―デザイン、設計をやるものとして私は、無垢材と自然素材にこだわってきました。メラミンより突き板、クロスよりペンキ、ペンキより珪藻土等の左官。自然素材は工業製品のように安定はしませんが、その安定のなさにこそ、温かみと生の宿る美学を感じています。
料理も同じ。そのものの持っているうまさを活かす。できる限り味の種類をシンプルにする。そのために、美味すぎる（刺激の強い）調味料を控えたい。そこでまずは塩の必要性の有無から考えました。いまのところは使っていますが、将来的には不使用に挑戦したいと考えています。また、コースを通じて砂糖も使いません。デザートも含めて、甘みは数種のみりんを煮詰めたもの、果物などを用いています。また、ディナーという遅い時間での食事であることから、基本的に炭水化物は豆、野菜などでとっていただこうと考えています。

「調和」―「無垢」を追求し、真の意味で無垢を感じていただくために必要なのが「調和」だと考えます。
一皿の上のみでの成立ではなく、合わせる飲み物、前後左右にわたる流れ、コース全体、さらに器、人、空間を含めた「Si」のすべてを通して調和をもたらすことを目指します。
とくにドリンクについては、単に「合うかどうか」ではなく、食べるものの輪郭を浮かび上がらせるツールであり、ときにはソースでもあると捉えており、そのため、コースはドリンク込みの１本勝負です。
アルコールとノンアルコールが選べます。
木曜日と土曜日はアラカルトメニューを中心にコースの日とコンセプトを別にした形で営業いたします。

～高島真悟(たかしましんご)プロフィール～ ピアニスト キーボディスト アコーディオニスト 作編曲家 クラシックギタリストの父と声楽が趣味の母の影響で、幼少期より音楽に親しむ。 ピアノは母の手ほどきを受けたが、その後はほぼ独学で習得。大学時代、サークルでジャズに出会い、卒業後はジャズのライブハウスでスタッフとして働く傍ら自身もステージに立ち、多くのベテランプレイヤーと共演を重ねる。また、ジャズピアニストの安井さち子氏に師事し、本格的にジャズを勉強し始める。

Pulga ブラジル・サンパウロ出身 幼い頃から遊びだった音楽が気づかぬうちにパーカショニスト、バックバンド等を務めるミュージシャンの道を１２歳から歩み始める。あらゆるジャンルを独創的かつオリジナリティにあふれた演奏で、現在、東京を中心に日本各地・アジアでショーやイベント、レコーディングに参加。 ブラジリアンミュージシャンの来日ツアーメンバーとしても活躍。

4歳よりピアノを始め、故 若松紀志子氏に師事。幼少の頃より様々な賞を受賞、ラジオや演奏会にゲスト出演で呼ばれる。
磐城高校卒業後、東京音楽大学ピアノ専攻を倉沢仁子氏、佐藤展子氏に師事し、卒業。
大学在学中より都内を中心に演奏活動を始め、卒業後、スペイン、サンティアゴ・デ・コンポステラの『Musica en Compostela-International University Course of Spanish Music』にて故アントニオ・イグレシアス、ジョセップ・コロン両氏よりスペイン音楽を学び、ディプロマを取得。
サントリーホールにて、小林研一郎マエストロと室内楽にて共演。

自分が好きな音楽を表現する幅を広げるべく、衝動的に2014年11月より、クロマティックアコーディオン(ボタン式アコーディオン)を始め、世界の有名アーティストが集うbillboard LIVE東京にて、世界で活躍するアコーディオ二スト達と共演。
アコーディオンを柴崎和圭氏に師事。

2016年9月「関東アコーディオン交流会コンクール 重奏部門」にて第1位優勝。
2017年9月「関東アコーディオン交流会コンクール アコーディオン暦3年以内独奏部門」にて第1位優勝。
2017年10月「第7回JAAアコーディオン国際コンクール ソロ一般の部」で第3位入賞。
「JAAアコーディオン国際アンサンブルコンクール」にて最優秀賞受賞。

2017年7月、チェロ奏者”黒川 実咲”とのDuo”MeiM”にて、ファーストアルバム『MeiM first』 CDをリリースし好評を博す。

同年、東日本大震災があった地元福島県いわき市に住む親友のために、CD『Dear C』をguitar eugune氏とリリースし、レコ発前に完売。
2017年12月、アコーディオニストcoba氏が主催するアコーディオンの登竜門『Bellows Lovers Night vol.16』に出演。

2018年6月レインボータウンFM生放送出演で生演奏全世界配信、FM熱海湯河原でも自身のオリジナル曲が流れる。

2018年9月、東京国際フォーラムで開催された西日本&東日本大震災チャリティーイベントに出演。

David Solanes’ Artist Page. バルセロナ市立コンセルバトリオ音楽院でギター学び、ディプロマを取得。 2008年に来日し、スペインの伝統音楽『La Tuna』を演奏する。 『Tuna de Japón』のメンバーとして東京を中心に日本全国数々のイベントや 公式行事などで演奏。2009年『Tempo Vivo』が主催する様々な音楽イベントに マルチプレーヤーとして参加。2010年 Konamiビデオゲームのコマーシャルソング を作詞し歌手としても参加。 2014年テレビ朝日『マツコ&有吉の怒り新党』に出演。 2015年より『俺のスパニッシュ』でソロ演奏出演スタート。また、ラテンジャズとスタンダードジャズの分野『俺のイタリアン』と六本木『Club T』でも演奏を続けている。
そして、2016年結成した伝統的かつ前衛的なスタイルを組み合わせた異種構成の音楽を原点とするバンド『Dharma ダルマ』のリーダーとなる。地中海、フラメンコ、ジャズ、ロック、日本の伝統的なリズムを融合したバンドスタイルは、他にはない独特なハーモニーを創り出している。現在、コントラバスそしてフラメンコ・カホンとともに最も古い日本楽器 (津軽三味線)と最も古いスペイン楽器 (バンドゥリア)が融合した音楽という新しいプロジェクトに取り組んでいる。 活動は関東にとどまらず、大阪においてエルメスの記念祭にてコンサートを行なっている。 また、直近では石川県和倉温泉加賀屋とラテン、スタンダードジャズ、ポップ音楽のギタリストとして出演の契約を取り付けている。
